Creamy Thai king prawns
32x Large king prawns
1 Tin coconut milk (stirred)
¼ pt Chicken stock
1 Garlic clove (optional)
1oz Fresh ginger peeled and finely sliced (or pickled)
1 Chilli finely diced (more or less chilli depending on personal preference)
1 Lime, zest and juice
½ tsp Cornflour mixed with cold water
5 Leaves fresh basil
1tbsp Chopped coriander
Method
- Fry the king prawns off in a little oil until sealed,
- Add the ginger and garlic.
- Add the chicken stock,
- Add the lime juice and zest and the chilli.
- Add the coconut milk and bring to the simmer.
- Stir in a little cornflour mixed with cold water
- Add the basil and coriander just before serving
